Celiac Disease.....and ME!

{these look so yummy!}

I was diagnosed with Celiac Disease yesterday...not exactly what I wanted to hear, but I won't complain, much! I kind of knew for the last week, we were just waiting for RESULTS from the biopsy.

If you're not familiar with Celiac, count your blessings....haha! Basically, it means I can't EAT wheat, barley, rye or oats. What's left? In my opinion...NOTHING! Did you know 'SWEDISH FISH' have gluten in them!?! That does not make me HAPPY!

I have to tell you....it's a very difficult diet to follow! But, I have done so good, for the last 24 hours! Right now, I'm in the mood for anything with BREAD. My kids said just eat it! I would, except....my body attacks itself if I do. What's up with that? Who told my body that fighting was OKAY? Well, it wasn't ME! I'm totally protesting this disease. I know, it won't work....but I wish it could!

So the only thing to do.....DEAL WITH IT and BE THANKFUL it wasn't something worse.

My HUBBY's support is making this MUCH EASIER...he brought home several things for me to eat last night. Did not like the rice bread, though! So, I ate a YAM with BROWN SUGAR and CINNAMON. Very Yummy! His support will get me through my cravings.

I'll be adding items to my Gluten-Free list (right sidebar)....if you know of foods that are gluten-free, let me know and I'll list them.

I am so sorry! My friend was diagnosed with this last year, and I work with a lot of kids with it, so I know a lot about it.

I know that Harmons and Whole Foods have a great gluten free section, and a lot of restaurants offer gluten free menus.

That is not a fun sounding disease at all. I am so very sorry. What were your symptoms? How did you know that you needed to go to a doctor? I am just so curious. Really curious. Good luck though. I know they have come along way in making gluten free foods. We have a store dedicated to products.

So sorry! Have you ever read "Patient Heal Thyself?" It's about a man that cured his Crohn's Disease, and it isn't supposed to be curable. I'm learning a lot about curing stuff with food and it is amazing. I've done it in my own life. If you want to talk I would love to. I can't say I'll cure you, but I do have some ideas that you could at least try. I wish you the best though!

Hi Kristin,
There are a lot of us dealing with celiac disease- our family has been for 10 years now. It's hard at first but gets easier after while. A supportive husband is great! Check to see if there's a support group in your area- you can get a lot of good info from them.
As far as diseases go, this is one of the best. No drugs, no drug side effects, just a diet change, and you'll feel better than you have for a long time!

ok, this is my fav recipe site because you can see all the ratings before you actually decide to make/bake it! plus it's a totally cool community full of activity. forgive me if you already use AR...but i did a search for you and this is what they have. i will also do some more searches for some more great recipes for you! so happy to know it was not worse than this, although, i cannot imagine what you must be feeling right now :) i am praying for you miss sassy, hang in there!!!!

I found out in Sept. and took 20 yrs! I'm lactose intollerant as well. My guts are still bothering me (not as much) it is better. It's the contamination that you can't control is the hard part (going to a rest., meat that may have injections, traveling). I read whatever I can on it and I'm finding that everyone knows someone who has it. LA in snowy Bflo.

Kristin, I have friend with this same condition. 1 out of 133 is a lot!! I didn't realize that it was so common. What a wonderful family support you have and thank goodness for awesome places like wholefoods.

I love how upbeat you are. I have "issues" with bread and pasta. I get queezy when I look at pizza... anyway... I found some cereals at Trader Joe's that are gluten free and amazingly taste really good! They're kinda like Kix. Gorilla Munch. Yes, I feel very adult walking up to the counter with my box of Gorilla Munch. "It's for the kids." I'm not lying... they really do eat it!
